This isn't a café with a roaster in the back: it's a roastery that happens to have tables. Colombian beans get tasted, adjusted and roasted again until they give what they can give.

The roaster works in plain sight, between terracotta walls and cobalt blue grilles. 100% Colombian beans, roasted the same day, and slow extraction methods that give the coffee the time it asks for.

On Calle San Juan, Getsemaní

David Arzayus came from Bogotá looking for another way to live and ended up setting up a roaster on Calle San Juan. What started as a travel plan turned into a fixed corner of Getsemaní, in a neighbourhood where almost every wall is painted by hand.

The coffee is roasted in front of you and the boards are written in chalk. Neighbours drop in, travellers walk past and stay, and most nights people end up sharing a table.

The course walks through the roasts one by one: where each style came from, which culture took it up, and why the same bean tastes different depending on how it is roasted and brewed. You taste, you compare, you talk it through, right next to the roaster. By the end you know what you are ordering in any coffee shop.
